This recipe was found at Restaurant la Cascade in the Languedoc region of France.
Ingredients
- 1L fresh, unsweetened orange juice
- 1L fresh tomato juice
- 150g onions
- 2 Tbsp. olive oil
- 1 tsp. dried ginger powder
- 3 tsp. finely grated fresh ginger root
- 3 tsp. stem ginger in sugar syrup
- 1 tsp. chopped parsley
- 1 tsp. salt
- 1 twig thyme
- 1 bay leaf
- 1 large carrot
Procedure
- Peel, chop and fry the onions; do not brown
- Peel & chop the carrot
- Mix all except stem ginger together and simmer for forty (40) minutes
- Finely chop the stem ginger.
- Liquidize, add 3 teaspoons of finely chopped stem ginger
- Reheat, check seasoning, and serve.
