Masala chai is a spiced version of the typical Indian milk tea. As with much of Indian cuisine, the exact mix of dry spices varies greatly and is often handed down in families from one generation to the next.

Procedure

Combine all of the spices and blend well in an electric grinder. You only need a small quantity for each cup of chai; store the rest for later. A full recipe will keep you stocked full of chai for months. Procedure for making ginger powder:

1. Select good quality ginger and wash to remove soils and other foreign objects. 2. Cut into thin slices. Spread evenly in trays. 3. Dry under the sun or in oven under moderate heat or 70ÂșC. 4. Pulverize using blender or grinder. 5. Pack and seal tightly.

Ingredients (per cup)

Procedure

  1. Boil water and milk.
  2. Add sugar, tea leaves and masala until the mixture becomes dark (about 5-10 minutes).
  3. The longer you boil, the stronger the chai.
  4. Strain into teacups to serve.
